My friend Paula gets together with some of her friends and they cook together about once a month. They make a bunch of meals then freeze them for use later. I used to get together with a group and go to a place called Thyme for Dinner which was the same concept. The meals were so good. We tried Super Suppers and just didn't like it and there is not another place like that around here. So Paula emailed me some of the recipes they try and I tried this myself. It went pretty well.
In two days I made 12 meals.
I have 2 Pork Tenderloins, 2 Cheeseburger and Fries casseroles, 2 Chicken Enchiladas, Santa Fe Chicken, 2 Chicken Caesar casseroles, Smothered Chicken, and some Chimichangas in the freezer ready to go when school starts back. All I have to do is remember to thaw the night before and then cook the days of. Throw a can of corn in a pot and dinner is done.
I hope to get motivated to do this about once a month, it seems so easy. So far I have learned two things: 1) wait until the meat is on sale and buy a bunch at once and 2) get better disposable pans.
